鳳梨蝦仁炒飯 Pineapple Shrimp Fried Rice

前幾天我公公給我們一顆鳳梨。
過幾天,放在桌上的鳳梨,傳來陣陣香味~
剛好又在朋友的臉書上看到他們做鳳梨蝦仁炒飯的照片。
決定自己也來做做看!

真的很想念台灣的鳳梨,那種甜,是初戀的味道 *^ _ ^*

雖然美國的鳳梨不是那麼甜,但用來做炒飯剛剛好呢!

My father-in-law gave us an pineapple the other day.
Pineapple is one of my favorite fruits. I especially love the ones from Taiwan. Taiwanese pineapples are sweeter than candies, and I’m not exaggerating it at all.
After a few days, I saw a friend’s cooking on her facebook page. She made pineapple shrimp fried rice and it looked so good!!!

I looked at the pineapple on my counter and decided, “It is time…”


材料 Ingredients

鳳梨 半顆
蝦仁 1~1.5 杯
玉米粒 半罐
午餐肉 適量
蔥 2支
洋蔥 半顆
大蒜 5瓣
白飯 2碗
蛋 2顆
醬油 2茶匙
鹽 適量

1/2 Pineapple
1 to 1.5 cup Shrimps
0.5 can Corn
2 Green onions
1/2 Onion
5 cloves Garlic
1.5 to 2 bowls Rice
2 Eggs
2 tsp Soy sauce
some Salt
some Lunch meat (about same amount as the corn)

炒飯其實是蠻隨性、多變的料理。所以其實你想加什麼料、什麼菜類、什麼肉類,都可以。有什麼不想加,就算了。但一定要有蝦仁和鳳梨,不然就不叫“鳳梨蝦仁炒飯”了。嘻嘻~
Fried rice is a kind of dish that you can adjust to your own taste and style. It’s a “Dish of FREEDOM”! hahaha. So you can use any kind of meat or veggie according to your likes and dislikes. Feel free to swap out any ingredient you don’t like. However, since this is called “Pineapple Shrimp Fried Rice”, maybe keep the shrimps and pineapple this time.


作法 Instruction

把鳳梨當成前男友,切一半!(哈哈開玩笑)
然後用自己獨特的方式,把中間的肉切或挖出來。
你可以切得很乾淨俐落,或像我一樣搞得一團糟…鳳梨外殼不要被破壞掉就好了。

Pretend that this pineapple is your Ex, and cut the pineapple into halves! (haha jk!) In your own creative way, cut out the meat. I totally made a mess… ANYWAY~ just keep the “pineapple bowl” in shape!
Dice up the pineapple meat into small pieces.

把大蒜、洋蔥剝皮切碎。(忘了給洋蔥拍照)
蝦子剝殼,或直接用已經去殼的蝦仁。我家的蝦子比較大隻,所以我把蝦子每隻都切對半。
家裡沒有太多選擇,所以我就選擇用已經有的熱狗,肉切小塊。

Peel and dice the garlic and onion. (sorry I forgot to take a photo of the onion… heeh.)
Peel the shrimp, or you can just get the ones already peeled. The shrimps I got at home were huge, so I cut them all into halves. It’s better to get shrimps that are not too big.
I only had hotdogs at home, so I just used them, and cut them up. But I think using bacon or smoked ham will actually taste even better.

好啦!今天的主角,白飯登場!!!
白飯最好是在冰箱放過一段時間,對用昨天剩飯也可以。
先把結塊的飯弄散些,把蛋打進去。稍微拌一拌,小心不要把飯攪到爛…

RICE! The most important part of a fried rice dish.

The SECRET to perfect fried rice is to use LEFTOVER RICE in your FRIDGE!

Being in the fridge will take away the moisture of the rice, which makes it perfect for stir frying. If you use freshly cooked rice, your fried rice will become too soggy (with all the sauces and other ingredients)…
And Confucius said, “Soggy rice, NO TASTE NICE!”

Break up the rice clump a little bit, and crack in the eggs.
Gently mix the eggs with rice. (Don’t smoosh the rice.)

把鳳梨放到鍋裡翻炒,到水分出來、被蒸乾,呈現有點焦糖褐色的樣子。
把鳳梨先放一邊。然後炒蝦子到熟,然後也先放一邊。

Heated up the wok or frying pan. Stir fry the pineapple cuts until the juice is evaporated and the pineapple is slightly caramelized. Set the pineapple aside, and stir fry the shrimps till done. Set the shrimps aside as well.

把洋蔥、大蒜、肉、蔬菜類放到鍋子裡翻炒。不能蓋蓋子,不然會悶得太爛,就這樣一直翻炒,到香味飄到你鄰居家裡。
把飯放進去翻炒、加進醬油、加上蔥花和鳳梨。
試一下味道,太淡再加一點鹽。

Put the garlic, onion, corns and lunch meat into the wok, and stir fry them together. (Yes… In the photo, you can see I added beans… canned beans… bad idea! made things soggy… If you wanna add beans, use fresh ones.)
When the other ingredients are almost done, put in the rice and spring onions that are cut into small pieces. Add in soy sauce and pineapples. Mix everything together.

Taste the fried rice, if it is too bland, then add in some salt and mix again.

還記得剛才切的鳳梨殼嗎?別丟掉呀!拿來裝炒好的炒飯呀!
蝦子其實也可以混進去炒飯裡,但我想要感覺蝦子爆多的感覺,所以我是把蝦子放在飯上。^ ^

Hope you haven’t thrown away the pineapple bowl by accident. 😀 Put the fried rice in the bowl.
You can also mix the shrimps into the rice, but I like to make it looks like there were tons of shrimps, so I just put the shrimps on the rice.

我女兒看到鳳梨炒飯的時候,下巴都要掉了。哈哈哈~
超戲劇化地大叫“哇~~~~~~~~~~”
第一次吃我做的鳳梨蝦仁炒飯,還是非常捧場的。讓媽媽好開心哪!
來看一下我女兒的開心表情!

My daughter’s jaw almost dropped when she saw the pineapple shrimp fried rice in a pineapple bowl. She kept saying, “Wow! So amazing! Oh, wow!” (What a cutie 😀 )
She loved the fried rice and ate a lot, which made me so happy. 🙂
