自製多汁又健康的漢堡肉!

美國最具代表性的食物,非漢堡莫屬呀!

美國速食餐廳的數量應該就跟台灣的便利超商數量一樣吧。
在偏僻的地方,像沙漠,都可以找到速食餐廳。
但是吃外面的這些漢堡薯條很不健康耶!

所以今天要教大家自己做好吃又健康、貨真價實、用真牛肉(傳說很多速食店都不是用100%的牛肉)的漢堡肉!

我也不知道那些店都用什麼肉…馬肉?豬肉?貓肉?人肉?嘿嘿嘿~

Even though I have lived in the US for quite some time now… I’ve never really like burgers. For me beef patties just aren’t real meat…
But my husband loves burgers so much! Therefore, I decided to make the beef patties for our burgers.

After I’ve tried making them myself, I don’t think I could ever go to a fast food chain again. 😀


材料 Ingredients

1.5-2 lb 牛絞肉
半個 洋蔥(切碎)
1 湯匙 甜紅椒粉 (smoked paprika)
1 湯匙 植物油
1 茶匙 鹽
1 顆 蛋
1 茶匙 孜然粉
少許 迷迭香
3/4杯 麵包粉

1.5-2 lb Ground beef
Half Onion
1 tbp Smoked Paprika
1 tbp Vegetable oil
1 egg
1 tsp Salt
1 tsp Cumin
0.5 tsp Rosemary
3/4 cup Dry bread crumbs


作法 Instruction

我買了一盒1.32磅的牛絞肉,做了8片漢堡肉。一般我時間更多的話,我會買牛肉來自己弄成絞肉。但我這幾天比較忙…好啦,是我懶。所以直接買現成的。

但買大塊的來自己絞,比較能保證肉的品質好。(我包水餃的肉也都是自己買大塊的豬肉回來自己弄成絞肉。)

Usually I would grind the beef with a food processor myself… but I was a little bit lazy lately, so I just got some ground beef straight from the grocery store this time.

But I highly recommend making ground beef yourself, so you can always be sure it is made with beef of good quality.

Here is the food processor that I use.

With this tray of 1.32 lbs of ground beef, I made 8 beef patties that were slightly bigger than my palm. Use 2 lbs if you are planning on making more or bigger burger patties.

洋蔥記得要先切碎呦!也可以用絞肉機絞碎,就不會哭哭了。 😀
加入材料沒有一定的順序,自己隨意呀~
倒入油、甜紅椒粉、鹽、洋蔥、孜然粉、迷迭香、麵包粉。
攪拌一下~

Dice the onion into really small pieces, or chop it with a food processor.
There is no particular order to follow when adding in the other ingredients… and feel free to adjust the amount according to your needs.
Just add in the oil, paprika, cumin, rosemary, salt, onions, bread crumbs.

打一顆蛋,攪拌、攪拌…
讓混好的肉,靜坐15到20分鐘,反省一下自己為什麼那麼誘人地美味。
先去準備一下等下要夾在漢堡裡的菜吧!

Crack an egg, and mix everything together really well.
Let the meat sit for 15 – 20 minutes. While waiting for the meat, you can start preparing other stuff that you will add to your burger, like lettuce or sliced tomatoes.

時間到了以後,用手把肉搓成大概像網球大小的球狀。
“啪嘰!”拍扁,但也不要太扁呀~大概跟大拇指的厚度一樣。
如果不會馬上都吃完,可以把一些肉餅一個個放到烤盤紙上,放在盤子上,冷凍起來。稍微凍定型以後就可以放到夾鏈袋裡保存。之後要吃,退冰過就可以煎來吃了。

Make the meat into a ball, about same size as a tennis ball. Press the meat ball into a patty.
If you’re not cooking all the patties that you have made, you could stack them up with a piece of baking paper in between each of them. Put them on a plate, and freeze them. When they are frozen, you could put them along with the paper inside a freezable ziplock bag for easier storing.

用平底鍋煎漢堡肉,大概每面煎五分鐘,或煎成自己喜歡的熟度。
煎好的漢堡肉放到盤子上,趁熱放一片起司上去。

Grill the patties on a frying pan for about 5 minutes on each side, or until well-done. If using an electric panini grill, grill for about 8 minutes on medium heat.

你可以決定你要放什麼配料在你的漢堡裡。我是煎了甜椒、切了一些酪梨、準備生菜、番茄片、酸黃瓜醬、番茄醬… 可惜沒有培根呀~

You can decide what you want to go with your burgers, but what I had prepared were pan-fried bell peppers, sliced avocados, lettuce, sliced tomatoes. Any sauces you fancy…
Uhhhh I wish I had some bacon… that would have been perfect!

自己做的漢堡真的是好吃到爆呀!!!
再也沒辦法吃外面連鎖快餐的漢堡了!

超級多汁、入味、又比外面賣的健康多了!
真的好簡單呀~ 我最喜歡簡單又好吃的料理了~

The burger was so juicy! Totally changed my view towards hamburgers.

I love how easy this recipe is, and it is a lot healthier than the burgers from those fast food places.
